History
Hevd Håndverksbakeri opened in autumn 2019 at Torget in Trondheim city center. The bakery was co-founded by Italian baking champion Emanuele Spreafico and restaurateur Michael Minervini, who met at Frati restaurant around 2018. Spreafico had spent three years as a baker at Sprø in Oppdal. Minervini is the son of Paolo Minervini, who founded Frati on Munkegata in 1973 and brought Italian pizza to Trondheim. Hevd is part of Fratigruppen, which operates several restaurants in Trondheim. Approximately two years of planning preceded the opening.
People
Emanuele Spreafico is a third-generation baker from Italy, raised in his grandfather's bakery. He won NM Årets Baker (Norwegian Baker of the Year) in 2016 — just six months after moving to Norway and starting work at Sprø in Oppdal. International achievements include third place in Panino D'Oro at Sigep (2012), second place in Coupe d'Europe de la Boulangerie (2013), and multiple first-place finishes in Italian championships. Co-founder Michael Minervini is one of Trondheim's most prominent restaurateurs, running Fratigruppen, which includes Frati, AiSuma, Una Pizzeria & Bar, Le Bistro, and ØX Tap Room.
Hevd's baked goods combine Nordic tradition, Italian baking artistry, and San Francisco-style sourdough. All products use long, cool fermentation and are baked in electric stone ovens. The signature bake Dolcemattino — a fermented coffee bread — won 'Årets bakst' (Bake of the Year) at Det norske måltid 2025. The jury described it as 'incredibly good baking' with a 'nuanced and complex flavor profile,' where nuts and fruit provide interesting textures against the airy, soft crumb and crispy, crackled crust. The bakery also developed Trønderbrød, made from 100% local spelt from Gullimunn.
Hevd uses sourdough methods for all bread and pizza. The flour is stone-ground from local mills, and the dough rests for a minimum of 48 hours.
Hevd Torget is located at the intersection of Kongens gate and Munkegata, directly on Torvet (the main square) in Trondheim city center. Torvet was laid out following Johan Caspar de Cicignon's city plan from 1681, which gave Trondheim its baroque street grid after the Great Fire. Kongens gate is the city's second most important street and crosses the main street Munkegata at Torvet. The building (Kongens gate 18 / Munkegata 21) spans 4,725 sqm, is owned by E C Dahls Eiendom, and has views toward Torvet and Stiftsgården — considered one of the most attractive properties in the city center.
Practical
Hevd operates three locations in Trondheim: Hevd Torget (Kongens gate 18) is the largest, with a restaurant, outdoor seating facing Torget, and a separate bakery counter on Munkegata. Hevd Adressahuset (Ferjemannsveien 10, by Bakke bru) has a café, bakery, and Pala Romana pizza. Hevd Søndre (Søndre gate 4, Bankkvartalet) is a cozier café with baked goods and Italian coffee. The Torget location spans approximately 700 square meters with glass walls overlooking the bakery. During the day it serves pastries, sourdough, and lunch; from 3-4 PM the stone oven is fired up for pizza.
